A soup with Ukrainian and Russian roots became one of the most reliably available hot meals in East Germany — precisely because it could absorb whatever meat and pickles a kitchen had on hand.

A tangy, paprika-red soup built from a medley of cured meats or sausage, simmered with pickled cucumber, tomato, onion, and a splash of the pickle brine, finished with a slice of lemon and often a dollop of sour cream. Still ladled out at Imbiss stands and snack bars across former East Berlin.

Why it's made this way: It arrived with Soviet occupation forces after WWII and stuck in GDR kitchens as a practical way to stretch scarce or preserved ingredients into a filling meal.
