Sunday mornings at Hamburg's centuries-old Fischmarkt, these get sold to a crowd that hasn't necessarily gone to bed yet — the market famously opens at dawn to catch nightclub stragglers on their way home.
Ground white fish is mixed with egg, breadcrumbs, onion and herbs, shaped into patties, and pan-fried until golden. Vendors sell them warm out of paper wrapping at the Fischmarkt and along the harbor, often in a bread roll with remoulade.
