Hamburg's Fischmarkt has run on Sunday mornings since 1703 and opens as early as 5 a.m. in summer, drawing partygoers heading home from the Reeperbahn alongside early shoppers.

Ground white fish is mixed with egg, breadcrumbs, onion and herbs, shaped into patties, and pan-fried until golden. Vendors sell them warm out of paper wrapping at the Fischmarkt and along the harbor, often in a bread roll with remoulade.

Why it's made this way: They grew out of Hamburg's centuries-old fish-trading economy as a way to use smaller or leftover cuts of the daily catch.
