It's built almost entirely from foods that survive months at sea without refrigeration — corned beef, potatoes, and pickled beets — a menu designed around a ship's pantry, not a chef's imagination.

Corned or salted beef is mashed together with potato and beetroot into a rosy, hash-like pink mound, topped with a fried egg, a rollmop herring, and gherkins. Harbor-side Imbiss stalls and market taverns near Hamburg's docks still serve it as a hearty, cheap plate.

Why it's made this way: It began as a way for sailors to make preserved shipboard rations edible on long voyages, and Hamburg's port culture kept the dish alive long after refrigeration made it unnecessary.
