Thüringer Leberwurst

It shares its EU geographical-protection status with the region's famous grilling sausage, even though this one's spread cold rather than grilled.

Finely ground pork liver and belly are seasoned with marjoram and allspice, stuffed into casing, and gently cooked, producing a soft, spreadable sausage. Market butchers sell it by weight for spreading straight onto bread, a common quick lunch across Thuringia.

Why it's made this way: Like the Rostbratwurst, it carries an EU protected-geographical-indication status tying its recipe and production to the Thuringia region specifically.
