A 1404 monastery account book in Arnstadt records a payment for sausage casings — making this one of the oldest named sausages in Germany with a paper trail to prove it.

A coarse-ground pork sausage seasoned with marjoram, caraway, and garlic is grilled over charcoal until the casing snaps, then handed over in a hollowed bread roll with mustard — no plate needed. Thuringia's town squares and highway rest stops run dedicated grill stands for it.

Why it's made this way: The recipe and grilling method are protected under EU geographical indication rules, and Thuringians treat the sausage as a point of regional pride distinct from any other German Bratwurst.
