Durban Breyani

Unlike most biryanis, a proper Durban breyani mixes lentils and spiced potatoes directly into the rice rather than serving them on the side, giving it a heartier, stew-like texture.

Fragrant basmati rice layered with marinated chicken, mutton or beef, lentils, boiled eggs, spiced potatoes and crisp fried onions, slow-cooked together with cinnamon, cardamom and cloves. Street vendors around Durban's CBD and the Warwick Junction market dish it up by the plate from huge pots.

Why it's made this way: Descended from the biryani that Indian indentured labourers carried with them in the late 1800s, breyani evolved its own local character in Durban over more than a century of isolation from the Indian subcontinent.
