Durban has one of the largest communities of Indian descent outside India, many descended from indentured laborers brought from 1860 to work the sugar plantations.

A soft, pan-fried flatbread wrapped around a filling of curried mutton, chicken, beans or vegetables, eaten by hand as a takeaway meal — the roll-up cousin of bunny chow, using roti dough instead of hollowed-out bread.

Why it's made this way: Roti stalls sprang up alongside Durban's curry houses and bunny chow shops as another quick, portable way to eat the city's Indian-influenced curries on the go, especially favoured at busy taxi ranks and street corners.
