Umngqusho

The Zulu call the same basic samp-and-beans combination isitambu, showing how a single Eastern Cape staple crossed language lines to become a shared South African comfort food.

Dried corn kernels (samp) simmered for hours with sugar beans until soft and creamy, traditionally finished with butter or fat and sometimes fried onions. It's sold in Eastern Cape markets and canteens as a hearty, filling plate, often alongside a hardbody chicken stew.

Why it's made this way: A Xhosa staple for generations, umngqusho carries special national significance as Nelson Mandela's favourite dish, which has cemented it as a symbol of South African heritage and resilience.
