Kwon Kal

The same millet-mingling technique appears across Northern and Western Uganda under different names — karo in Ankole, kalo more broadly — even though each region treats it as distinctly their own.

Kwon kal is made by stirring millet flour into boiling water and mingling it with a wooden stick until it forms a firm, smooth dough, then served in a woven basket to be torn by hand and dipped into sauces like malakwang or dek ngor.

Why it's made this way: Eating kwon kal by hand from one shared basket is a core part of Acholi communal dining, a practice carried from village compounds into Gulu's restaurants today.
