The same base dish goes by different names tribe to tribe across Uganda — kwon among the Luo, atapa among the Iteso, obusuma among the Samia — a map of the country's ethnic geography hiding in one staple food.

Kawunga is Eastern Uganda's take on posho: maize flour cooked into a thick, dough-like mash, often blended with cassava flour, served alongside malewa, beans or vegetable sauces at market eateries around Mbale.

Why it's made this way: Posho by itself is eaten right across Uganda, but blending in cassava flour is the distinctly Eastern habit that gives kawunga its firmer bite in Bugisu households.
