A single Nile perch can weigh well over 100kg, making it one of the largest freshwater fish eaten anywhere in Africa.
Emputa, the Nile perch, is cut into steaks and fried or stewed with groundnut sauce, sold by the piece at market food stalls near Jinja's fish landing sites.
Why it's made this way: Nile perch were introduced into Lake Victoria in the mid-20th century and grew into the region's dominant commercial catch, reshaping the local fishing economy and diet around Jinja.
