Omugoyo

The dish's name comes from the Lusoga word for "mingled" — a nod to how thoroughly the two ingredients are mashed together into one.

Omugoyo mashes steamed purple-skinned sweet potatoes together with boiled red kidney beans (nambale) into one smooth, mingled dish, kept warm in covered pots at Busoga's roadside food stalls and markets.

Why it's made this way: Sweet potatoes are among the most widely grown crops in Busoga, and mingling them with beans turns two everyday staples into the region's own comfort food.
