The sweet potatoes are often steamed in banana leaves before mashing, the same way matooke is cooked.

Omugoyo mashes steamed purple-skinned sweet potatoes together with boiled red kidney beans (nambale) into one smooth, mingled dish, kept warm in covered pots at Busoga's roadside food stalls and markets.

Why it's made this way: Sweet potatoes are among the most widely grown crops in Busoga, and mingling them with beans turns two everyday staples into the region's own comfort food.
