Luwombo

The name literally means "to cook in leaves" — the banana-leaf wrapping seals in every drop of sauce without a splash of added water.

Luwombo is a slow-steamed stew of chicken, beef, goat, mushrooms or groundnuts, sealed inside smoked leaves from the Ndiizi banana plant and cooked over gentle heat for hours so the meat and spices mingle undiluted. It's served still wrapped, opened tableside over a mound of matooke.

Why it's made this way: First prepared for the Kabaka (king) of Buganda in the early 20th century, luwombo remains the dish reserved for guests of honor and special occasions across the kingdom today.
