Local lore holds that the Bagisu have been eating bamboo shoots from Mount Elgon's slopes for over 3,000 years.
Malewa is bamboo shoot harvested from the wild bamboo forests on Mount Elgon's slopes, smoked and dried for preservation, then simmered into a sauce with ground simsim or groundnut paste and served over matooke, cassava or posho.
Why it's made this way: The Bagisu have gathered and eaten Elgon's bamboo shoots for generations, and malewa is a centerpiece of Imbalu circumcision ceremonies and traditional weddings across Bugisu.
