The shoots are boiled and then smoked or sun-dried, which lets families store malewa for months after the short harvest season.
Malewa is bamboo shoot harvested from the wild bamboo forests on Mount Elgon's slopes, smoked and dried for preservation, then simmered into a sauce with ground simsim or groundnut paste and served over matooke, cassava or posho.
