The smoked-gourd storage technique flavors the milk before a drop is poured — the container itself is a seasoning tool, not just storage.
Fresh milk from Ankole long-horned cattle is stored and served in smoked gourd containers called ebyanzi, seasoned beforehand with burning dry grass to give the milk a distinctive smoky taste.
Why it's made this way: In Ankole society, cattle wealth is inseparable from milk culture — Banyankole drink milk, yoghurt or ghee at nearly every ceremony, and Mbarara is still nicknamed "the land of milk and honey."
