The name comes from the 1929 New Orleans streetcar strike, when the Martin Brothers restaurant fed striking 'poor boys' free sandwiches on French bread.
A po' boy is a crusty French-bread sandwich stuffed with fried shrimp, oysters, or catfish (or roast beef and gravy), dressed with lettuce, tomato, pickles, and mayo. Corner delis and lunch counters across New Orleans build them to order and wrap them in paper for eating on the go.
