Breakfast Burrito

Santa Fe's Tia Sophia's says it was the first to put the words 'breakfast burrito' on a menu, in 1975.
A flour tortilla rolled around scrambled eggs, potatoes, cheese and bacon or chorizo with New Mexico chile, bought handheld with the chile inside or smothered on a plate.
Why it's made this way: Rolled egg-and-potato tortillas were part of New Mexican cooking before the name existed, and the dish spread from New Mexico across the Southwest.
