The classic version is served straight out of a slit-open single-serving Fritos bag, a serving method said to have started at the old Woolworth's counter on the Santa Fe Plaza.

Corn chips are topped with a scoop of chili, chopped onion, and shredded cheese and eaten with a plastic fork right out of the bag. Plaza vendors and fair stands across New Mexico still serve it this way.

Why it's made this way: Santa Fe's old Woolworth's counter is central to the dish's popularization, and New Mexican versions typically finish with the local red or green chile instead of plain chili powder.
