New Mexico has an official state question — 'Red or green?' — referring to chile preference, and it's actually written into state law.
A diner burger is topped with a generous pile of roasted, peeled Hatch green chiles and melted cheese, often served from walk-up counters and fair stands across the state. The chiles are roasted in rotating drum roasters right outside the shop in late summer.
Why it's made this way: Hatch Valley's unique soil and climate produce the specific green chile variety the dish depends on, grown nowhere else with the same flavor.
