Its… Huainan Niurou Tang (Huainan Beef Soup) Soup · Simmered Huainan Niurou Tang (Huainan Beef Soup) The soup is traditionally eaten with a crisp baked flatbread on the side, torn up and dunked into the chili-oil broth. A beef broth, simmered for hours with bones and offcuts, is ladled over glass-noodle vermicelli, sliced beef, tofu skin, and bean sprouts, finished with chili oil and cilantro. Mao Doufu (Hairy Tofu) Snack · Fermented & fried Mao Doufu (Hairy Tofu) The fuzzy white coating covering each block is a living mold, deliberately cultivated for days — the tofu is meant to look furry, not spoiled. Fresh tofu is inoculated with a mold culture and fermented until white, hair-like filaments grow across its surface, then pan-fried with scallions and chili until crisp. Fuliji Shao Ji (Fuliji Roast Chicken) Main · Fried & braised Fuliji Shao Ji (Fuliji Roast Chicken) Legend holds that the Qianlong Emperor tasted this chicken on one of his southern tours and praised it.
