Despite the name, kabalagala contain no eggs or dairy — they're an entirely plant-based street snack.

Kabalagala are small, deep-fried pancakes made from mashed ripe bananas mixed with cassava flour and a touch of local pepper, fried until they puff up like little doughnuts and sold hot in paper by roadside vendors around towns along the Nile and Lake Victoria.

Why it's made this way: The snack takes its name from a Kampala neighborhood that became known for selling it, and it has since spread as an affordable breakfast and tea-time bite across Uganda's lakeside and riverside towns.
