The same roasted-groundnut technique also turns up in malewa in Eastern Uganda and dek ngor in the north — a common thread running through the country's regional sauces.
Binyebwa is a thick sauce of roasted, ground peanuts simmered with tomato and onion until glossy, ladled generously over steamed matooke or rice at food stalls throughout the city.
Why it's made this way: Groundnut sauce is one of the most common everyday pairings for matooke in Buganda, the humble counterpart to more festive dishes like luwombo.
