Different types are prized by name and flavor — the reddish, fat-bodied nsejjere is considered the most delicious of all the winged termite varieties.
Enswa are winged termites that emerge from anthills after the first heavy rains. They're caught under bright lights at night, then roasted dry or pounded into a paste that's cooked into a sauce eaten with matooke or cassava.
Why it's made this way: To the Baganda, enswa sit alongside nsenene as a prized seasonal harvest — a free, high-protein bounty that arrives with the rains and is shared and sold within hours of being caught.
