Kikomando

Ugandans joke that eating kikomando makes you strong "like a Commando" — the nickname that gave the dish its name.

Kikomando chops chapati into ribbons and folds it through a pot of stewed beans, often topped with a fried egg — a filling, cheap plate sold from roadside stalls and taxi-park kiosks across the city.

Why it's made this way: Invented in early-2000s Kampala by a chapati vendor in Ntinda looking to feed hungry boda-boda riders and laborers on a budget, the dish was later immortalized in song by musician Bobi Wine.
